1 - Worried about getting Protein into your child? A smart reader passed along this hint. She slices firm-fleshed, white fish into French fry size and shape. Then she breads the fish in potato flour (not starch) & fries them in a little oil. Result? Fish "fries" her son likes!

2 - When greasing a muffin tin with margarine or coconut butter, use a plastic sandwich bag as a mitten. When finished, simply turn it inside-out as you remove it, and toss it into the trash.

3 - If a loaf of bread comes out denser and heavier than you like, try this: Slice and store the bread in the refrigerator. Before serving moisten both sides, shake off excess water and then toast. The bread will be moist and soft enough for sandwiches.

4 - Is your child egg intolerant? Here is a good substitute to use when you are baking. For each egg required, substitute with the following: one teaspoon of Ener-G Egg Replacer, one tablespoon of Omega Nutriflax, (ground flaxseed powder) and two to three tablespoons of water. Be sure to use all three.

5 - KUZU is a gluten-free starch that makes custards and puddings a breeze to prepare. It comes in small packages, because a little goes a long way. Each package contains little "rocks" which are easily dissolved. It costs about $1/oz. To use: dissolve 1 TBL. of KUZU in 2 TBL. of cold liquid for every cup you want to thicken. Stir the KUZU liquid into the main recipe and heat until clear.
